I had just been to lunch, at Van’s Cafe Pho, with my blogger friend, Carrie (The Gluten Free Hack) and finally got to the bottom of how to eat pho, pronounced “fuh.” So happy Carrie taught me! When I enjoy pho it’s usually while making slurpy mess. I’ve been asking what to do with the big, white spoon but no one ever gives me a straight answer. I need details.

Next time we meet at Van’s, Hong Than or Rice and Noodles be sure to say, “Hey there!” I won’t be coved in broth and noodles. So, that’ll be cool.
(p.s. I love pho soup. There is something magical about Van’s broth and when I asked it explained it all … and by “explained it all” I mean you’ll feel compelled to put your scarf over your head to capture the scent and steam from your bowl of soup. So back to the explanation … The broth is prepared with an infusion of anise, cinnamon and herbs. Magical)
