Posting for Berks County Living has been rather fun. The February issue just came out. To celebrate my story in the Women in Business section and because I like taking traditional recipes and putting a healthier spin on them, let’s do a giveaway!

Hello! I would love to have a healthy mac and cheese recipe. My kids will not eat it if they see any added spinach or tomatoes. I have tried to convince them that shredded carrots are actually orange cheese! Thanks!
I love mac and cheese with my whole heart and make a version that includes pureed butternut squash. I’ll need to get around to posting this one! thanks for sharing
p.s. have your taken your children to local farms so they can pick their own food? sometimes when they can connect to where food comes from it teases their perspective.
Hi Phoebe! We are doing a diet that is not about substituting as much as redefining. So the only new items I have bought are nutritional yeast for a cashew kale chip recipe…and buying almond flour which sits unopened. I am back on the Whole30 wagon and Josh actually really is happy (he still eats some grains-like GF bread/popcorn. So I do not know what to say..maybe something creative with Whole 30 plan?
I’ve never heard of the Whole30 thing. I need to google that. I do love you are thinking redefining vs. substituting. Sometimes folks think swapping vegan cream cheese is better for you just because it’s dairy free. If you are eating for wellness it’s a great spin! Vegans use nutritional yeast to lend a cheese flavor dairy free foods. I’m curious your intentions for the almond flour and have you ever made your own?
let me google this whole30 thing! thanks for sharing.
a favorite dessert of mine that I’d love to see made healthier would be cheesecake. thank you for your giveaway opportunity, Phoebe. you’re the sweetest! xo, Barb
hmm… Barb. There are so many recipes for mock cheesecakes with over processed ingredients. I do make a nut based cheesecake but it is still calorie dense but it’s a vegan and raw food recipe….
1. risotto
2. chocolate mousse yum!
3. does pizza count as a snack? 🙂 definitely pizza should to be more healthy 😉
Hope you like the inspiration I sent you, Mary! I love your taste.
