This can be kind of addicting. I originally posted this recipe way back in 2009, yup…I’ve been blogging for a bit. When peach season ripens I begin to crave this vegan, raw pudding. Imagine it would be just as easy with a zest of lemon/orange and squeeze of juice then tossed with blueberries or raspberries or whatever is seasonal. I just adore peaches and this is my way of enjoying peaches and cream.
- 1 cup raw cashews
- 1 1/2 – 2 cups water / non dairy milk / coconut water
- 1 tsp vanilla
- 5 T chia seeds
- 1 tsp agave, optional. you may like it less sweet. taste first you, can always add as much or little after it gels.
Blend all the ingredients until creamy (I use a “bullet brand” style blender). You may want to add more liquid so that the texture is like a “wet/thin” milkshake. Let it sit at least 4 hours to “gel” and then enjoy! The chia seeds will really gel up so can add more liquid if you find it is too thick or if it is too thin add more chia seeds.
I like mine topped with fresh fruit.
Get creative with this. I’m sure you can make a chocolate version…coconut cream/water…orange blossom water…pumpkin & pecan… blueberry and lime … use alternate nuts like hazelnuts and add coco top with strawberries
