The mission … tea sandwiches for summer entertaining. The goal here is a basic recipe that you can work with to add things that are seasonal… this can take you to fall. Make it sweet or savory.
The basics:
- 8 oz cream cheese OR neufchâtel, 1/2 chèvre & 1/2 cream cheese, marscapone, ricotta
- 1/2 cup chopped cherries OR raspberries, peaches, blueberries or yellow raisins
- 2 tsp agave OR maple syrup, honey or organic sugar
- nuts, slivered almonds, pecans, candied pecans or walnuts (optional)
mash it, mix it, spread it, enjoy..
You are getting the idea right? Recipes are made to be broken… use what is in season then find an herb or spice to compliment the fruit of choice. Once you have that base then you can build your itty bitty tea sandwiches.
Get creative and use fun breads. I used Shady Maple Cherry bread. They have an easy dozen flavored breads. Cut them up into fun shapes and dig around in your cookie cutter collection to find some appealing shapes. Kids will have fun with this recipe.
I made the cheese a cherry and honey cheese and layered with some green spinach and turkey breast.
At the Weaver’s cooking class, we also made some fun shapes that children enjoy making and eating. Just trying to inspire you to think outside the box. Eating well does not mean boring. This is just whole wheat bread, almond butter and banana with agave.
