I know…but can’t help myself. First there was butter from scratch then there was strawberry butter…now radish butter? Don’t my arteries need a break? Well silly, you make it, then feed it to your friends.
Feel like I need to share this recipe in a singing style of the hokey pokey… you put your radish in, you put take your radish out, you put your radish in then you whiz it all about… but since the video thingy is not set up .. here it is in print.
radish butter recipe
- approximately 6-8 radish (fresh & local…from your garden… even better), trimmed & cubed
- 1 stick of butter, really soft so that you can hand mix
- 1/2 tsp salt
- 1 T fresh dill
- 1 T fresh parsley
- tad bit of lemon zest…a tiny pinch
put the radish and herbs in a food processor and chop
put the chopped radish in a bowl, add the butter and blend. keeps for about 2 days. add more salt or herbs to taste. fun to top with funky salts? black Himalayan maybe…
