shopped my own shelves, rummaged for leftovers, salvaged odds & ends… whatever you like to call it I made dinner in 15 minutes.
oh, and it’s very tasty.
poor man’s soup, maybe? Regardless, here is the simple rule I follow: kale, tomato, smoked turkey breast, and beans (lentils add the best flavor but white beans are what was in the fridge). I think the original recipe/inspiration was on the back of a gigantic bag of kale. Kale might just be my favorite veggie.
Did you know kale is LOADED with calcium? I think I love it as much as sweets. I definitely love it more than doing laundry & washing dishes.
quickie dinner
- 1 onion, chopped
- 3 carrots, cleaned and chopped (don’t waste them by peeling)
- 2 T chopped garlic
- 1 bunch kale, coarsely chopped
- 2 cups beans
- 2 cups chopped, smoked turkey breast
- 1 can diced tomatoes
- 2 cups broth
saute the onion, garlic and carrots. add the kale, tomatoes, beans, and turkey. cover and cook on low simmer for about 15 minutes and that’s that.
