My plan for dinner is to keep it simple tonight, it’s hot and there are so many tasty things to pick up from market but this trip was a not brainer.

2 spanakopita from Yasou! I can serve them at room temp so that’s easy enough. I know I have farm fresh lettuce and tomatoes so a side salad is a requirement. The addition of garden dill and a vinaigrette makes it perfect.

Groff’s Vegatables & Stoner’s Homegrown Vegetables are offering fresh patty pan squash. Now don’t get all excited like you don’t know what to do with these. Take a deep breath and this tip from a stranger (yes, you know me always talking to strangers at market), sauté them with a bit of butter a finish them with a squeeze of fresh lemon. I plan on adding garlic.
If you would like to stretch the recipe add a handful of cherry tomatoes, spinach, kale or chard, or even shrimp and serve with a side of rice pilaf. That would keep you under $10 for two.
