extreme temps + explosion of farm fresh local product + $10 = 2’sday dinner for 2
My plan for dinner is to keep it simple tonight, it’s hot and there are so many tasty things to pick up from market but this trip was a not brainer.
2 spanakopita from Yasou! I can serve them at room temp so that’s easy enough. I know I have farm fresh lettuce and tomatoes so a side salad is a requirement. The addition of garden dill and a vinaigrette makes it perfect.
Groff’s Vegatables & Stoner’s Homegrown Vegetables are offering fresh patty pan squash. Now don’t get all excited like you don’t know what to do with these. Take a deep breath and this tip from a stranger (yes, you know me always talking to strangers at market), sauté them with a bit of butter a finish them with a squeeze of fresh lemon. I plan on adding garlic.
If you would like to stretch the recipe add a handful of cherry tomatoes, spinach, kale or chard, or even shrimp and serve with a side of rice pilaf. That would keep you under $10 for two.
If you have never cooked with pattypan don’t let them intimidate you. You can stuff them, just as you would a long summer squash or slice and prepare. My recipe for stuffed patty pan is here. Try this creative recipe for Pikcled Patty Pans from Growing Roots Partnership.
Go grab some patty pan and play in the kitchen. Make sure to pick up the spanakopita for an easy compliment to dinner.
… insert a few hours and this is what I made …
