It was love at first sight. It happened on a quick trip to Lancaster Central Market and a must stop at the Sweet Annie Produce. The kale and mirco greens (red russian kale) stole my heart. I was just reading in urban mag that micro greens are über trendy and come at the cost of $19 per pound. When I spotted the basket of the red russian kale micro greens in Ben’s basket my heart skipped a beat… AND they were Lancaster county priced at $12 a pound. I felt like a queen…a queen of kale.
I bought a 1 1/2 pound of mixed baby soft kale and micro greens.
Here’s the thing. In 2 days we were leaving for a 2 week holiday and our fridge was empty. So I’ll share what I made but use it as a guideline…adding what you have on hand.
massaged kale & micro greens salad
1 1/2 lb baby kale and micro greens
1/4 cup nuts – roasted pumpkin seeds
1 cup fruit, diced – mango
optional garlic clove very thinly sliced
extra virgin olive oil, drizzle
vinegar, splash (try infused vinegar)
salt, sprinkle
pepper, freshly cracked
in a large bowl toss the washed & dried baby kale with about 2 tsp extra virgin olive oil and garlic then massage to soften the kale. if you are using full leaf kale you can really squeeze it to soften the bite sized pieces… really, massage it with your 2 washed hands. toss in the mirco greens, add vinegar, salt & pepper to taste. top with fresh fruit and nuts… enjoy and be prepared to crave it a few days later.
