I’m going to share a basic dip recipe recipe with you. You can jazz it up based on your tastes. I say use it three ways because you can use it as a dip, a salad topper or as a base for chili.
You may have seen a variation of it called “texas caviar.” King’s Grocery, here in Bowmansville, sells it by the bucket load and suggests you use it as a dip with corn chips. I have used a variation of this recipe but I can’t just keep it simple, I like to bulk it up with tasty goodies! So easy. Men like it. Ladies like it. Kids like it too! …and pssst… it’s good for you or let’s just say it’s not bad for you… if that makes it more appealing.
easy bean dip
- 2 (14 oz) cans of beans black, white or kidney beans (make it colorful)
- 1 cup prepared rice
- 1/4 cup red onion, diced
- 1 small sweet pepper, diced
- 1/2 small bunch cilantro, chopped
- 4 tablespoons olive oil
- 4 tablespoons lime juice
- 1 squeeze of honey
- 1 squeeze mustard
- 1 1/2 teaspoon cumin
- 1 1/2 teaspoon dried oregano
- salt and pepper to taste
mix it up eat it on top of mixed greens salad, as a dip a side salad OR add a jar of salsa and enjoy with chips OR add fresh mango or pineapple OR then add a diced avocado… or two (I love avocado) and a splash of hot sauce….
lastly… use as a base for chili
