This is a super easy recipe. If you want to skip the “make the butter recipe” and fast forward to the strawberry butter, just use bought butter, 1 stick.
Start with 2 cups of organic whipping cream. I used chilled whipping cream but you can use it at room temp. There are many methods to make butter but to me this seemed easiest. The process from start to finish took about 10-15 minutes….
Here goes…. 2 cups whipping cream into the mixer fitted with a whip attachment. Set at medium high speed.
Starting to get silky, whipped, and smooth…but keep on keeping’ on…
Now it’s starting to look like whipped cream gone bad. Didn’t you ever wonder what over-whipped cream looks like? well….take it further.
oh boy, oh boy… it getting buttery
Almost there… get your strainer and bowl handy
Get the butter into the strainer and gently press out the remaining milk. put the butter back into the blender and whip a bit to get it smooth for the addition of the lavender sugar and strawberries.
use 1-2 T of organic sugar or sugar in the raw (sub agave or honey if you like OR just skip the sweet altogether) & about 1 T of lavender buds (dried or fresh), and 1 cup of strawberries.
put the sugar and lavender in a spice mill (coffee grinder designated for spice use) and blend until the lavender is broken down.
Dice the berries…
Add the sugar to the butter and gently combine. while the butter is soft quickly whip in the strawberries until just combined…. that’s it.
