Strawberry season is in full swing and my Strawberry Balsamic Dressing is perfect for any garden-to-plate salad you want to toss together.
I planted strawberries for the first time two seasons ago. Best thing I’ve planted! The plants have grown a bit out of control this year and I promised Dan I’d trim them back. They throw off legs which quickly root. In my mind, I’m just getting a new row started by taking those new roots to another row!
This simple dressing is perfect with my Strawberry Kale Quinoa Salad but you can use it on any fresh salad you prefer.
- 2 cups strawberries, hulled
- ¼ cup freshly squeezed orange juice
- ¼ cup balsamic
- ¼ cup olive oil
- Salt
- Pepper
- Puree all of the ingredients in a blender until smooth.
- Season with salt and pepper. The dressing will keep for one week, in the refrigerator.
