Can’t seem to find many rules on pesto and since I’m most likely not to follow them anyway … radish pesto…it had to be.
Picked up 2 gorgeous bunches of organic radishes from B & H Organic Produce for an event to cater. I used the radishes in the salad and that left the greens. On a recent vacation, I ate many caprese salads and not sure why but continue to crave it. Probably better than craving bushwackers and painkillers. I have been using this dressing for 2 days now and the color is still a vibrant green.
radish greens pesto
yeilds 12-14 oz
8 oz extra virgin olive oil
1/2 cup walnuts
4 oz radish greens
1/4 cup parmasean cheese, grated
1/4 cup chopped garlic scapes
1 T plus 1tsp lemon juice
1 tsp salt
dash of cayenne
puree all in blender until smooth and season to your taste.
