It was a week when we would not be home long and I didn’t want to stock the fridge. Made a quickie stop at the store and picked up 4 items and this dish was a go.
To stretch your $$ and save some calories try bulking up your meat with veggies. My favorite veg to sneak into ground turkey or chicken recipes is the glorious mushroom! Pound for pound they are a fraction of the cost of meat (we won’t even get into the environmental cost savings) and they are packed with nutrients.
Easily make this a vegetarian dish by substituting the meat with a mix of rice and beans (2 cups beans & 1 cup cooked brown rice).
gluten free and low cal tacos
2 mini tacos per person, approx. 5- 6 serving
- 1 lb ground turkey breast (preferably local, pasture raised)
- 8 oz mushroom, chopped
- 1 onion, (preferable organic) chopped
- 2 cloves garlic, minced
- splash of worcestershire sauce
- 3 T chili seasoning
- 1/2 cup beer or broth
- 2 T tomato paste
- 1 head boston lettuce
toppings
- 1 can black bean
- 1/2 cup shredded cheese
- 2 avocados, mashed with a splash of lime juice, salt and a bit of minced garlic
- 1 lime
- 1 large tomato, chopped
sauté the onions, garlic and mushroom until just tender, 10 minutes. add the ground turkey breast, with a splash of worcestershire, and cook thoroughly. when the meat is browned add the chili seasoning, 1/2 cup of broth, and 2 T tomato paste and simmer until it’s absorbed. and that’s that.
so yummy and guilt free!
