Wonderful on cooked vegetables, use as a base for a vinaigrette, a spread for sandwiches or grilled cheese, tossed into a chilled potato, pasta or rice salad. I’m testing a recipe for baked fish. Top 2 (8 ounce) pieces of haddock with a tablespoon of tarragon pesto and feta cheese. Roast, on the top shelf of an oven heated to 450º, for 15 minutes.

½ cup fresh tarragon
½ cup fresh parsley
¼ cup fresh basil leaves
¼ cup walnuts
2 tablespoons white wine
1 teaspoon grated lemon peel
3 tablespoons fresh lemon juice
⅛ teaspoon ground pepper
¼ teaspoon paprika
¼ teaspoon salt
Instructions
Puree in food processor or blender until smooth.
