For a vegetarian version substitute the meat with an extra potato, sweet potato or mushrooms. Serve with a gluten-free or whole grain pasta, whole grain rice, quinoa or millet. Easily prepare this recipe in a slow cooker. Follow the manufacture’s instruction for time.
Stove top instruction: Combine all of the ingredients in a large sauce pan and bring the mixture to a gentle boil, reduce heat to simmer, cover and cook for 30-40 minutes.
Garnish with toasted croutons or fresh herbs.
