Roasted Red Pepper Sauce

Perfect as-is but a simple palette for herbs and spices! Triple batch this recipe and freeze in separate freezer bags for use in a pinch.

Serves: 4-6
Ingredients
  • 2 teaspoons extra virgin olive oil
  • ½ cup chopped onions
  • 2 cloves garlic, peeled and chopped
  • 1 (14.5-ounce) can diced tomatoes
  • ½ cup chopped roasted red pepper
  • Freshly ground pepper
  • Sea salt
Instructions
  1. In a small saucepan over medium heat sauté the onions in the olive oil until soft.
  2. Stir in the garlic and cook for another minute.
  3. Add the diced tomatoes and roasted red pepper and bring to a simmer, cover and cook for 20 minutes. Season with pepper and salt. Remove from heat.
  4. Use an immersion blender or blender to puree the sauce to a consistency you prefer.
