Roasted Rhubarb

Serves: 6
- 1½ cups chopped rhubarb, ½” pieces
- 1 cup strawberries, stems removed and quartered
- 2 tablespoons organic sugar or sugar in the raw
- pinch of crushed, dried lavender buds
- pinch orange zest
- Preheat oven to 400 degrees. Line a rimmed baking sheet with parchment paper.
- Toss all the ingredients in a bowl and spread onto baking sheet.
- Roast for 10-15 minutes, until tender and softened. Check every 5 minutes to prevent burning.
- Allow to cool.
