Roasted Rhubarb

Use this as an ice cream topping, a fun layer between cakes, muffins, a topping on a crumb cake or with a bit of syrup for pancakes.

  • 1½ cups chopped rhubarb, ½” pieces
  • 1 cup strawberries, stems removed and quartered
  • 2 tablespoons organic sugar or sugar in the raw
  • pinch of crushed, dried lavender buds
  • pinch orange zest
  1. Preheat oven to 400 degrees. Line a rimmed baking sheet with parchment paper.
  2. Toss all the ingredients in a bowl and spread onto baking sheet.
  3. Roast for 10-15 minutes, until tender and softened. Check every 5 minutes to prevent burning.
  4. Allow to cool.
