Strawberry Thyme Syrup

Use this for baking, lemonade, cocktails or with sparkling water.

  • 2 cups (1 pint) strawberries, tops removed and quartered
  • 1 cup sugar
  • 1 cup water
  • 4, 4-inch long stems fresh thyme
  1. Combine the strawberries and ½ cup sugar in a bowl and allow to rest while you prepare the syrup.
  2. In a small saucepan over medium heat combine ½ cup sugar and water until melted.
  3. Reduce heat to medium low, stirring in the thyme and lime for 10 minutes.
  4. Add the strawberries and bring to a boil. Reduce heat to low simmer for 10 minutes.
  5. Remove from heat. Cool.
  6. Strain into a tightly sealing glass jar and keep refrigerated for 2 weeks.
