Adapt the recipe by using non-fat Greek yogurt as a substitute for the sour cream, if you like. Currents can be swapped for raisins, dried blueberries or a mix of dried fruit and chocolate chips. Make buttermilk from scratch by adding two teaspoons of vinegar to milk and letting it sit in the refrigerator overnight.

Ingredients
  • 4 cups all-purpose flour
  • ½ cup sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ¾ teaspoon salt
  • 1¼ cups dried currents
  • 2 eggs
  • 1¼ cups buttermilk
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
Instructions
  1. Preheat the oven to 350˚F. Line a 9 x 13-inch baking pan with parchment paper. Bernadette uses a baking stone.
  2. In a large mixing bowl, whisk the flour, sugar, baking powder, baking soda, salt and currents.
  3. In a second bowl, whisk the eggs, buttermilk, sour cream and vanilla extract until smooth.
  4. Pour the liquid into the dry ingredients and combine with your hands or a large spoon. The dough will be sticky.
  5. Scoop the dough onto the prepared baking sheet. Using flour-dusted hands, form an 8 to 10-inch circle, patting it down to an even thickness.
  6. Sprinkle the top with 1 tablespoon of flour. Slice an X into the top and bake until golden, about 1 hour to 1 hour and 15 minutes.
