Tips: Use a Granny Smith apple, or try a new apple variety. Add a pinch of ground nutmeg or cardamom, if you like. If you’d like to try buckwheat flour substitute ¾ cup all-purpose flour plus ¾ cup buckwheat flour, it will create a different texture.

Serves: 10-12
Ingredients
1 cup milk
1 egg, beaten
2 tablespoons butter, melted
2 tablespoons apple sauce
¾ cup peeled and shredded apple
1½ cups all-purpose flour
2 tablespoons brown sugar
2 teaspoons baking powder
1 teaspoon ground cinnamon
¼ teaspoon salt
Instructions
In a large bowl, combine the milk, egg, butter, apple sauce and apple.
In a separate bowl, whisk together the flour, sugar, baking powder, cinnamon and salt. Stir the flour mixture into the apple mixture, just until combined. Do not beat or over-mix.
Heat a lightly oiled frying pan over medium to medium-high heat. Scoop the batter onto the pan, using a ¼ cup measure for each pancake. Brown on each side and serve hot.
