Ten-year-old Zoey Hoover of Indiana County took home a blue ribbon in the 29th Annual PA Preferred™ Cookie/Brownie/Bar Contest with her recipe for Crispy Crunchy Brownie Delights.

Ingredients
  • 1-2/3 cups granulated sugar
  • ¾ cup butter, melted
  • 2 tablespoons water
  • 2 PA Preferred large eggs
  • 2 teaspoons vanilla extract
  • 1-1/3 cups flour
  • ¾ cup dark chocolate baking cocoa
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup rich and creamy vanilla frosting
  • ½ cup salted peanuts, coarsely chopped
  • 2 cups crisp rice cereal
  • ⅔ cup creamy peanut butter
  • 1-1/3 cups semisweet chocolate chips
Instructions
  1. Preheat oven to 350ºF. Grease a 13x9 baking dish.
  2. In a large bowl, combine the sugar, butter and water. Stir in the eggs and vanilla.
  3. In a medium bowl, combine the flour, cocoa, baking powder and salt. Add to the sugar mixture and stir.
  4. Spread the batter into the prepared baking dish. Bake for 18 to 25 minutes or until a toothpick inserted in the center comes out clean. Cool completely.
  5. Spread the frosting over the cooled brownies, then sprinkle with the peanuts. Refrigerate while making the cereal mixture.
  6. Place the cereal in a medium bowl and set aside. In a one-quart saucepan, melt the peanut butter and chocolate chips over low heat, stirring constantly. Pour over the cereal and stir until evenly coated.
  7. Spread the coated cereal over the frosted brownies. Refrigerate for 1 hour before cutting.
