This recipe makes simple bites or can be used as a crust for a no-bake gluten-free pie. Consider ice cream, custard or fresh fruit as a pie filling.

Serves: 32 pieces
  • 2 cups nuts such as walnuts, pecans, almonds or hazelnuts
  • 2 cups pitted dates
  • ⅓ cup dark cocoa powder, Hershey’s Special Dark or raw cacao powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon instant coffee or espresso powder
  • ¼ teaspoon almond extract
  • Pinch of salt
  • cayenne, cinnamon, orange zest (optional)
  1. Puree all the ingredients in food processor until fine crumbs are formed.
  2. Form into ½ ounce balls.
  3. Roll in cocoa powder, nuts or shaved coconut.
  4. Store in a tightly sealing container in the refrigerator or freezer.
