So we kicked off the 1st in the series of phoebe’s pure food soirée. There was a healthy group of us, both in number of attendees and like mindedness. Our guest speaker Eve Miller Beck, licensed massage therapist, shared some personal stories and tips about the preventive health benefits of both massage and diet. I think it is safe to say that we had a wonderful time, relaxing, noshing, connecting, smiling and learning. Special thanks to Shi Yoga & Wellness for hosting!
I did ask that folks think “raw foods” first then vegan or vegetarian as an option. It was wonderful the variety of dishes that were prepared and shared. We had everything from quinoa Mediterranean salad to a peach and almond crust torte. Thought it would be fun to have everyone vote (old school greek & roman style, with beans) for their favorite sweet or savory dish. see the raw peach & almond crust pie with fresh blueberries? It was peach perfection. The quinoa and black bean salad was delish! Those are raw summer squash rolled with buffalo mozzarella, sun dried tomato, spinach and basil.
DRUM ROLL please… for the favorite savory dish brought by dynamic duo, Linda & John. The recipe always seems to be a crowd favorite.
hail to the kale salad
(Chef AJ’s vegan cookbook)
- 24 oz curly kale, chopped
- (or a blend of raw shredded beets and/or carrots)
dressing:
- 1 cup raw almond butter
- 1 cup coconut water (or regular water)
- 1/4 cup fresh lime juice (about 2 limes juiced & zested)
- 2 cloves garlic
- 1” or 1/2 oz fresh ginger, peeled
- 2 T low sodium tamari/soy sauce
- 4 pitted dates (soaked in water if not too soft)
- 1/2 tsp red pepper flakes
combine all dressing ingredients in a blender/food processor and blend until smooth & creamy. let the fun begin by massaging the dressing into the kale. top the salad with slivered almonds before serving.
ANOTHER DRUM ROLL…. and the favorite sweet of the night was brought by Sarah K. She finds much of her inspiration for recipes on line and was gracious enough to share the link for this raw salted caramel chocolate pecan torte. The crazy surprising thing is the salted caramel was made with … not sugar or butter… dates and agave. It was amazing!
So now it is time to eat and relax…
