Strawberry Thyme Syrup

Ingredients
- 2 cups (1 pint) strawberries, tops removed and quartered
- 1 cup sugar
- 1 cup water
- 4, 4-inch long stems fresh thyme
Instructions
- Combine the strawberries and ½ cup sugar in a bowl and allow to rest while you prepare the syrup.
- In a small saucepan over medium heat combine ½ cup sugar and water until melted.
- Reduce heat to medium low, stirring in the thyme and lime for 10 minutes.
- Add the strawberries and bring to a boil. Reduce heat to low simmer for 10 minutes.
- Remove from heat. Cool.
- Strain into a tightly sealing glass jar and keep refrigerated for 2 weeks.
