A last-minute decision had us cooking at home, instead of dining out, for Dan’s father. It’s Sunday, we live in Lancaster County and all the local grocery stores are not open. There will be 4 of us getting together. Limited options …what to make? what to make?

- 3 organic chicken breasts
- 1 local zucchini
- 1 bunch of local asparagus
- organic mixed greens
- frozen sponge cake (I made last week)
- orange & vanilla curd (food in jars)
- strawberry & rose petal infused syrup
- whipping cream
- our own black raspberries
garden stuffed lemon chicken breast (easy way to stretch the meat…add seasonal, thus economical, local veggies)
extra zucchini went in a foil pack with fresh garlic to cook on the grill. oh, also used some left over holiday ham in some of the chicken.
olive bread from the East Goshen Farmers’ Market and leftover little tarts and the table was full…
sponge cake drizzled with strawberry rose infused syrup, with a smear of orange & vanilla curd, topped with lavender whipped cream … and Dan’s black raspberries
