Irish Soda Bread

- 6 cups all-purpose flour
- 1 cup sugar
- 3 teaspoons baking powder
- 2 tablespoons caraway seeds (optional)
- 1 teaspoon salt
- 1 teaspoon baking soda
- ½ cup raisins or currents
- 4 tablespoons oil
- 1 quart buttermilk
- Optional addition: ⅓ cup plain greek yogurt, per Mary Ellen
- Whisk the flour sugar, baking soda, caraway seeds, salt, baking soda and raisins.
- Add the oil and buttermilk to the dry ingredients; mix well.
- Pour even amounts into two, prepared loaf pans.
- Bake at 400ºF degrees for 30 minutes.
- Bake an additional 30-35 minutes at 350ºF degrees.
