Prepare Fig Syrup by bringing figs, water and organic sugar to a gentle boil. Stir to dissolve the sugar, reduce heat to low. Add optional orange zest and rosemary and gently simmer for 10 minutes. Pull off the heat and allow to cool. Strain (don't press) into a tightly sealing jar.
Prepare the Cocktail by combining the bourbon, Cointreau and Fig Syrup and a handful of ice in a shaker. Shake. Serve straight up or over ice. Garnish.
