The boxty will be a thin pancake. Cook it until it is deep golden on both sides. The cooking time will vary. Experiment with a few small pancakes before you build the confidence to make a large one. Taste the small ones as you go.

Ingredients
  • 1 pound potatoes, boiled, peeled and cooled
  • ½ cup all-purpose flour
  • ⅔ (give or take) cups whole milk
  • Salt, to taste
  • Pepper, to taste
  • Knob or two of butter, to grease pan
Instructions
  1. Chop, mash or puree the potatoes until they are liquified.
  2. Add the flour and milk so it has the consistency of a thin pancake mixture. Add more milk or flour to attain your desired consistency.
  3. Heat the butter in a skillet, cast iron pan or griddle. Pour on about ¼ of the mixture. Spread it out so it is evenly distributed. Cook the pancake over medium heat for 4-6 minutes.
  4. Serve as is or add the filling of choice and treat the like crepes or a burrito.
